YOUR NEW FAVORITE SALAD DRESSINGS (a Detoxinista Recipe Review)

I suggest you clean out your tubs ladies, because you're going to want to bathe in this dressing it's so damn good. We drown our meal-sized salads in it, use it as a dip, and sometimes even a finishing sauce. It's delightful on any salad really, but it's especially good when combined with roasted vegetables and fall produce like squash and Brussels sprouts. Oh! We use this on our turkey burger salads and side salads too, you really can't go wrong with it.

The ingredients for another Detoxinista recipe we love: Vegan Hemp Seed Ranch

WHAT YOU'LL NEED:

  • 2 Tablespoons raw apple cider vinegar (which is good for the gut!)
  • 1 medium shallot, peeled and top/bottom cut off
  • 1 Tablespoon maple syrup (The original recipe calls for 2, but I use only 1 because sugar is like crack to me and I truly find it sweet enough with just 1!)
  • 1/3 C Extra virgin olive oil
  • 2 Teaspoons Dijon mustard
  • 1 Clove garlic, peeled and bottom sliced off (Did you know the bottom stub of the garlic is bitter?!)

DIRECTIONS:

  1. Consider doubling or tripling the batch before you begin. This vinaigrette is so good you might as well make extra for all the salads you're going to want to eat with it. Keep some in the fridge for up to a week and freeze the rest in an ice cube tray or baby food tray for future use. You'll thank me later. 
  2. Once you decide how much to make, throw all ingredients in a high-speed blender or food processor and blend on high until smooth. 
  3. Store in an air-tight container in the fridge until ready to serve. 
  4. That's it! Yay!

THE BACKSTORY

Detoxinista was one of the first bloggers I discovered when I started experimenting with a more whole food-centric diet. After being diagnosed with a dairy allergy and a few other sensitivities, I was pretty much convinced eating freely and for enjoyment was a thing of the past. Then I tried a few of Megan Gilmore's beautifully simple recipes that are mostly made with whole food ingredients. Her desserts, dressings and snacks helped me realize that healthy, allergen-free food doesn't have to be boring and tasteless. On the contrary, simple combinations of fresh, natural ingredients are often more delicious than packaged alternatives.   

The above is a slight adaptation of the Shallot Vinaigrette Megan featured in her fab book "Everyday Detox". We also love the Hemp Seed Ranch, No-Fail Kale Salad, and a ton of other recipes from the book.
