MY FAVORITE RESOURCES FOR DELICIOUS HEALTHY RECIPES

I believe food is meant to nourish our bodies, and give us energy, strength and longevity. I’ve learned first hand that nutrition can be profoundly healing and supportive of everything from mental health to hormone balance to fun stuff like glowing skin and satisfying bowel movements. I also believe food is meant to be delicious, deeply satisfying, crave-worthy, beautiful and fun. It is a wonderful source of connection, celebration and joy. I don’t believe you should have to sacrifice the health benefits or the satisfaction and joy in your quest to build a healthy, happy relationship with food.

I’ve loved food (especially brownies, cookies and ice cream) since I was a little girl. Ever since discovering the incredible power of nutrition as an adult, I became determined to find that happy medium where my palate and my body would be in love with the food on my plate. I also have no desire to spend days at a time in the kitchen, so I began a quest for easy, yummy, healthy recipes. I’ve experimented and explored A LOT over the past decade or so, and below is a list of resources that is the result of quite a bit of trial and error. Because the most common request I get is for healthy recipes that are both tasty and approachable, I thought it was about time I create this list for you! In my opinion, these are the best blogs, cook books and resources that help keep eating healthy exciting. So many of the recipes contained within are knock your socks off delicious, even if “healthy” is a dirty word in your house!

NOTE: The common theme here is whole, real foods and nourishing ingredients coming together in a way that will make you drool. Many of these recipes are great for special protocols and dietary restrictions, but unless you have to worry about them, ignore the labels and just have fun exploring all the wonderful flavors. Don’t let “paleo” or “vegan” keep you from trying something that sounds good because you don’t subscribe to those labels (unless of course you have allergies or ethical reasons).

Barefoot Contessa: Ina Garten is the OG queen of making magic with simple high-quality ingredients. We can’t get enough of these Lemon Chicken Breasts in our house, and I simply can’t say enough about the mouth watering Chicken Marbella recipe, which is PERFECTION for entertaining.

Half Baked Harvest: I could eat HBH meals and desserts for the rest of my life and be happy, but my favorite recipes are her fun, inventive sheet pan dinners. We love the Sheet Pan Cuban Chicken especially.

Pinch of Yum: My husband and I love Lindsay’s healthier take on comfort foods. Don’t miss the delectable 3 Ingredient Creamy Tomato Shells (a favorite of so many guests in our house) or the Slow Cooker Beef Ragu. They’re both so easy and so fantastic!

Detoxinista: Megan is my go-to for heavenly salad dressings and simple but mind-blowing desserts. This Creamy Thai Dressing is a must-try and don’t forget to bake one of her desserts, like these Flourless Peanut Butter Chocolate Chunk Cookies that are always a big hit!

Minimalist Baker: If you’re working on getting more vegetables and legumes in your diet, you really can’t beat Minimalist Baker. Most recipes are plant-based, and they are all incredibly flavorful and interesting. A few favorites: Roasted Red Pepper Pasta, Mediterranean Sweet Potatoes, 1 Pot Lentil Dahl, and these truly divine Gingerbread Cookies (we make them every single year multiple times during the holidays)!

Goop: I know Gwyneth and Goop are divisive in the wellness world, but I still think Goop is a good resource for healthy but tasty recipes, especially if you’re on a special protocol. The salsa verde in this recipe is so delicious that I usually double or triple the batch so I can freeze some for later and slather it all over veggies and all sorts of things. We also like this simple, cozy meal, especially in the fall and winter!

Clean Eats: We are die-hard fans of the Asian Lettuce Wraps and many other recipes in this book. This is the book you use to prove to yourself that simple, wholesome ingredients can come together in amazing ways. So many pages are stuck together with sauce and ingredients…I consider that a sign of love and cooking success!

No Crumbs Left: In addition to being delightful and endearing, Teri is like the Ina Garten of Whole 30 and Paleo. She makes magic with simple ingredients and though her recipes tend to take a little longer, they are always well worth it. My current favorite is this Fish Filet.

The Modern Proper: We got hooked on The Modern Proper after trying their Five Spice Chicken Sheet Pan Dinner, which we still cook once or twice a month! Sheet Pan Chicken Fajitas is another fun one on regular rotation in our house.

Against All Grain: Danielle Walker is a savior in the food allergy and sensitivity world, but she also just makes damn delicious food. Her Roasted Brussels Sprouts with Bacon Jam in her Celebrations cook book are insanely good, as in worth buying the whole cook book for that one recipe good.
